There’s nothing quite like having your signature spot in the city. That one bar or restaurant you can always count on for a good time. But what if your favorite spot could bring both your top dishes and consistent service, along with a new experience every time you came in? Fremont Chicago {15 West Illinois Street, Chicago; 312.874.7270} is doing just that. Fremont Chicago is switching everything up, changing the entire the restaurant based on a theme. Each month, guests can indulge in new cocktails, bites, and even new décor. Come in this week to experience Spring Break, but mark your calendars for April, as the restaurant will be showcasing ‘Raining Rosé’ to kick off the season. We chatted Four Corners’ Marketing Manager, Tonia Rudny, to discuss the rotating atmosphere.

DiningOut: How will the restaurant be transformed each month?
Tonia Rudny: Boasting whimsical themes inspired by pop culture and timely happenings, the restaurant and bar will drastically change its décor, music, DJ attractions, and specialty food and drink items to provide guests with a continually rotating program. Fremont has enlisted production and design company, Ivan Carlson, to convert the space into ‘Spring Break’ for March, complete with Tiki huts, lifeguard stations, deck chairs, glow sticks, beach balls, and blow-up floaties.

As far as food and drink specials go, what can guests expect?
We are curating special events, to round out the monthly programming series. This month, guests can stop by on Wednesday-Friday from 5-8pm for the Spring Break Happy Hour experience featuring interactive live cocktail stations for $5 each drink, including an Old Fashioned Station, Hot Drink Station, and Build-your-own Mule Bar. Fremont’s full menu will be available during happy hour, plus a selection of complimentary house-made snacks.

What are some menu items and drinks we should be sure to try?
Standout offerings include Waffle Cheese, featuring smoked tomato purée, basil, and chive oil with Brun-uusto cheese sandwiched together in a waffle iron, and the Hot Fried Chicken, with ramen-crusted buttermilk chicken, hot sauce, white cheddar mac and cheese, and Belgian-style waffles with bourbon maple butter.
What is your favorite part about the changing themes?
Inspiration from the event series sparks from pop culture and timely happenings that introduce an incredibly fun and exciting atmosphere for our guests—a completely different scene from any other bar or restaurant in Chicago. We want guests to feel like they’re experiencing something new every month!
