DiningOut: What made you partner with Dining Out on the Passbook?
Todd Stein: The Bristol has always been a fan of Dining Out Chicago. This Passbook is a great resource for Chicago locals and tourists alike. Lots of fantastic restaurants are included, it’s a great deal, and we are happy to be a part of it!
Why should guests take advantage of this opportunity?
With a buy one, get one entrée offer—how can you pass that up? It’s great for a date night or catching up with a friend. As the new Executive Chef of The Bristol, I recently revamped the menu so it’s a great time of the year to stop by and check out some of our new dishes.
What do you want people to experience when they dine with you?
The Bristol is a special neighborhood bar and gastropub. It’s been around for nine years, so there are a number of “classic” dishes that are a must-try, like our Amish Half-Chicken, Giant Farm Egg and Ricotta Raviolo, and the Basque Cake for dessert. There are also some great new dishes that are a bit of out the box, and quite delicious. Dishes like our Steak Tartare with cheddar-dusted chicharrones, endive salad, and curry cauliflower with burnt orange have been a hit.
What is the restaurant’s culinary philosophy?
The Bristol, with its long history in Bucktown, has an eclectic mix of veggie and meat-friendly shared plates. Our menu features handmade pasta, farm-fresh produce, and a nose-to-tail approach to cooking, as well as handmade cocktails, a comprehensive wine list, and beers from around the world! Two of my personal favorites right now are our Crispy Pig Ears with sweet and spicy sauce, plus our Lake Superior Whitefish is wonderful and flavorful as well.
What wine or cocktails would you pair them with?
For the pig ears, a great little Grenache or Syrah with lots of fruit freshness is perfect. With a little amount of peppery spice, it’s the perfect amount of acidity to cut right through the indulgence that comes with the pig ears. Or even one of our rye whiskeys would do the trick! For the whitefish, I’d recommend trying a Sancerre, or better yet, jump right across the Loire River and try a Sauvignon Blanc from the Coteaux du Giennois for great quality and value.
What fun things do you have coming up this fall?
Well, it’s Chicago, and as we all know the weather becomes a bit chillier! So certainly, some more comfort-driven foods, with seasonal fall and winter friendly ingredients. We will be likely to add some additional meat dishes and richer sauces, too.
