Why did you decide to partner with DiningOut on the Passbook?

Shoop: After partnering with DiningOut for so many years, we find extreme value in the business that has been driven to the restaurant.  This book gives guests another opportunity to try us for the first time or jogs their memory that we are still here – AFTER almost 10 years!

What do you want people to experience when they dine with you?

Once you’ve dined at PROSECCO, you realize how special it is. From having Kevin Keane, our Bar Manager make the perfect Aperol Spritz to Sam Geatti, our Wine Director, help select your bottle of wine to pair with your meal or having a table visit from Chef Mark, it’s the extra touches that guests appreciate. Not to mention the complimentary toast of Prosecco to start your dining experience!

What is the restaurant’s culinary philosophy?

Chef Mark has always said, “get the guests in the door and they won’t want to leave.” We love getting to know our guests. We have clients that live in Michigan and love a specific soup we occasionally make. Every time they visit, they request it. The request never goes unnoticed. We go above and beyond to make all of our guest’s experiences memorable ones.

What are some of your favorite menu items right now?

As summer is winding down, the tomato plants are growing like crazy. Chef Mark’s mother personally grows all of our heirloom tomatoes that go into our caprese salad. We’re also featuring a ½ lb meatball that is Chef Mark and his partner/sister’s family recipe. A menu staple from inception would have to be the Avocado Salad mixed with diced lobster and prawns. It’s light, refreshing, and full of flavor. We’re excited for the fall months ahead to let all of our fabulous pastas and entrees shine!

What wine or cocktails would you pair them with?

Prosecco pairs delightfully well with everything, but I definitely recommend it with the caprese salad. The acidity and honeydew melon and green apple undertones pair perfectly with the fresh mozzarella from Naples, Italy. For the meatball, Sam would recommend a glass of Montecucco Rosso from Montalcino, Italy. The fruitiness, playfulness, and gentle tannins pair well with the hearty tomato sauce.

Tell us about your food and beverage program overall!

We feature over 100 labels on our wine list solely from Italy. We specialize in sparkling wines and traditional Italian amaros and grappas. Our menu hits highlights of all 20 regions of Italy.

What fun things do you have coming up this fall?

Lots of fun new features on the menu. We have a few new menu items in the works using fall ingredients like wild boar and everyone’s favorite – white truffles.

We also have a slew of daily features. Monday is Industry Night with 40% off food and beverage for industry professionals, and on Tuesday we have a three-course Pre Fixe menu for only $39. Wednesdays are for ½ off wine up to $99 per bottle and then there is a special Throwback Thursday Menu–it’s $33 for 3 courses of Chef Mark’s family recipes of old school Italian favorites.
