Summer is tomato season, and it’s one we are always happy to celebrate. In honor of this juicy red veggie, the folks at Osteria via Stato {620 North State Street, Chicago; 312.642.8450} is throwing a dinner, sure to satisfy our veggie needs.
On Wednesday, August 31, the restaurant is putting on their annual Heirloom Tomato Dinner with Nick Nichols of Nichols Farm & Orchard, starting at 6:30pm. Executive Chef David DiGregorio will welcome Chef Nichols of Nichols Farm & Orchard to the restaurant for an annual dinner highlighting Chef David’s favorite summer ingredient—the seasonal heirloom tomato! Guests can meet the farmer while enjoying a selection of passed appetizers before sitting down to a mouthwatering multi-course dinner with wine pairings.
For now, Chef DiGregorio is getting us all ready for the event with a special recipe, the Heirloom Tomato Caprese.
Heirloom Tomato Caprese
Serves four
- 1 lb heirloom vine-on tomatoes
- 1/2 c cherry tomatoes
- 4 tbsp extra virgin olive oil
- 6 slices of mozzarella
- a pinch of kosher salt
- salt and pepper to taste
- basil to taste
Remove stems from heirloom vine-on tomatoes and cut into 1/2 inch slices. Season with kosher salt. Cut cherry tomatoes in half and toss with extra virgin olive oil, basil, and season with salt and pepper.
Arrange alternating layers of heirloom tomatoes and mozzarella slices on serving platter. Scatter cherry tomatoes and top with freshly torn basil leaves. Drizzle on olive oil and black pepper.
