Though “summer” unofficially came to an end with the Labor Day weekend, there’s one thing that certainly will help keep the season alive—new cocktails to sip on! Filini Bar & Restaurant’s {221 North Columbus Drive, Chicago; 312.477.0234} Lead Bartender Ergys Dizdari has created wine slushies and a tasty watermelon cocktail, Seedless Sally, that have that summertime sweetness we all want to hang on to. Enjoy them on the patio overlooking the river and Millennium Park or make them at home with our recipes below!
White Peach Slushy
- 1 bottle of pinot grigio
- 1 cup of simple syrup
- 1 cup of lemon juice
- 2 cups of peach pureé
In a blender filled with ice, add pinot grigio, simple syrup, lemon juice, and peach pureé. Blend until smooth. Pour into a glass and serve.

Red Mango Slush
In a blender filled with ice, add 1 bottle of pinot noir, 1 cup of simple syrup, 1 cup of lemon juice, and 2 cups of mango pureé. Blend until smooth. Pour into a glass and serve.
Seedless Sally
In a shaker filled with ice, add 2 ounces of CH Vodka, 4 basil leaves, 1-1/2 cups of watermelon pureé, and 3/4 ounces of lime juice. Shake and strain into a glass and garnish with basil.
