There’s nothing common going on at Commons Club in the Virgin Chicago Hotel {203 North Wabash Avenue, Chicago; 312.940.4400}. They are encouraging Chicagoans to “take a stab at the uncommon” with fun events like local DJs, a Camp Cerise brunch party, and (of course) an Upside Down Tea Party at Commons Club. Pastry Chef Becky Holmes heads up the tea party, as well as their Boozy Tea Talks, and she has lots more delicious fun coming up…
DiningOut: Who were some of your earliest culinary influences?
Becky Holmes: Definitely my grandparents—I have so many childhood memories of picking gooseberries and rhubarb from their garden and then climbing up on a dining chair to help turn it into a pie or crumble. I spent my teenage years in Ann Arbor, Michigan, and was so inspired by the Zingerman’s community of businesses, especially the Bakehouse, which ended up being my first introduction to the industry.
What led you to the Virgin?
I’ve worked in catering, bakeries, and restaurants, but really enjoy the diversity of product I’m able to create that comes with working in a hotel. I grew up in the UK so the Virgin brand has always been close to my heart, and I’m really excited to be a part of such a rapidly growing hotel brand.
How does catering to hotel guests compare to a stand-alone restaurant?
I love the variety we are able to offer our guests through the different outlets on the property. Whether you’re looking for a cappuccino, brunch with friends, happy hour drinks with coworkers, or rosé on the rooftop, we’ve got you covered. There’s definitely something for everyone.
Aside from the food, what do you love most about the hotel?
Two things—first, the culture. It’s such a joy to be able to work with others who love what they do, and have fun while doing it. Secondly, Cerise, our rooftop bar, wins my heart every time with its great views and even better cocktails.
How would you describe the Chicago food world?
Fast-paced, innovative, and competitive. There’s always a new spot opening or a chef doing something new, which is really exciting to be a part of.
What makes Commons Club stand out?
Commons Club delivers bold and innovative flavors through an approachable menu with a heavy seasonal influence. Everything on the menu is there for a reason, and the Uncommon Burger is ridiculously good.
You have some really interesting classes and new menus coming up!
For the summer months, expect housemade doughnuts, black cherry macarons, and savory asparagus tartlets. I switch up the menus based on what’s in season, as well as taking inspiration from the Jenwey Teas we use in our cocktails, but there’s always a selection of sweet and savory bites. In the next couple of months, I’ll be hosting a series of classes in Commons Club on how to throw your own boozy tea party, from cocktails to dessert, which I’m really excited for.
Why is tea time such a fun meal?
Tea time has come a long way since its first iterations among British royalty, and our rendition adds in the fun of boozy tea cocktails. I firmly believe that a glass or two of champagne makes everything better, so when you add bubbly to delicious bites and great company, it’s the perfect recipe for a good time.
What are your Chicago summer plans?
Exploring news bars and restaurants and catching a cubs game or two, in between traveling out of state for a few weddings.
