Bright colors and flavors come together for a truly remarkable dish
WALTON STREET KITCHEN + BAR {912 North State Street; 773.570.3525} is an American bistro offering straightforward dishes that tap into timeless classics. The vibe is as approachable as it is distinguished, with a scene reminiscent of a fine glass of scotch. The menu is a comforting smorgasbord of upgraded favorites, where you can find anything from a Traditional Cobb Salad and Griddle Burger to a delightful Sushi Rice Salmon Bowl and Cream-Filled Donuts.
Founders Ryan and Anna O’Donnell have already been wowing Chicagoans for years with their other restaurants: Gemini in Lincoln Park and Coda di Volpe in Lakeview. They continue to showcase their talent for creating impeccable neighborhood spots with the recent opening of Walton Street in the Gold Coast. Saved for sunny weather is one of their signature dishes: Sweet Pea Toast.
“This dish highlights all that is light and fresh about spring and summer seasonal dining,” explains Executive Chef Thomas Leonard. “Peas and mint are a natural, classic pairing, and English peas are a quintessential spring vegetable,” which in his case, are sourced locally from Nichols Farm and Local Foods. “This is a dish vegetarians and meat-eaters alike can enjoy.”

2. FRESH MINT has always been a friend to peas, adding sweet notes to starch
3. SHALLOTS are pickled in-house with white wine vinegar imported from Italy and a mixture of spices and herbs, adding acidity without overdressing

5. TRUFFLE VINAIGRETTE is made with white wine vinegar, along with roasted garlic, shallot, honey, and Dijon mustard, finished with olive oil and an Italian white truffle oil
