Weather be darned, but spring is here (we promise) and summer isn’t too far off either! While there are plenty of new spring menu additions in Chicago, we don’t want you to miss any of the refreshing new spring cocktails either. So we sat down with the Chicago staple, Sullivan’s Steakhouse, to get the recipes for their top drinks for the season (with simple recipes, too!)
Before we go into full bartender mode, the menu additions should not be overlooked. Typically known for being a traditional steakhouse, Sullivan’s also offers lighter options like Shrimp Cargot and Broiled Salmon Rockefeller for the warmer months. However, they would never forget their roots, and so meat-lovers should try the Hand Cut Filet Duo or fantastic Porterhouse as well.

But every good meal does need a perfect drink to complement it. And in addition to the great wine selection, Sullivan’s also offers a series of signature cocktails. All year long, we recommend The Knock-Out, which describes not only the taste but the strength of the drink. Guests should also be sure to try the Red Over Heels Martini for an Insta-worthy cocktail. However, for the new season they also have some special menu additions you can create at home if you like …

Brooklyn Cocktail
Brooklyn Cocktail
Stir 2 ounces Knob Creek rye, 3/4 oz Carpano Antica Vermouth, 1/2 oz luxardo maraschino, and 2 dashes Peychaud’s bitters in a mixing glass filled with ice. Strain into a chilled martini glass. Garnish with a maraschino cherry and lemon peel.
If you are more of a fan of the classics, but still want something sweet for the warmer weather, fear not. The steakhouse has just the thing for those of us who want to maintain a sense of dignity, even if we do watch “Southern Charm” as a guilty pleasure.

Old Fashioned
“In regards to the Peach Old Fashioned, we wanted to develop a modern twist on a classic cocktail that would drink well during the spring and summer,” explains Ed Eiswirth, director of beverage at Del Frisco’s Restaurant Group. “Peach is the perfect seasonal fruit to pair with bourbon as peaches pair really well with its vanilla notes. We feel it’s a great way to start your dining experience at Sullivan’s.”
Peach Old Fashioned
In a bucket glass, muddle lemon wedge, 1/2 ounce peach purée, 1 maraschino cherry, 2 dashes angostura bitters, and 1/2 ounce simple syrup. Add 2 ounces Knob Creek bourbon and fill glass with ice. Gently stir cocktail to bring the fruit up and around the ice. Splash with Sprite.
