St. Patrick’s Day at Ruxbin – Thursday, March 17
Corned beef is a classic St. Patrick’s Day dish, and this month Ruxbin {851 North Ashland Avenue; 312.624.8509} is offering a twist on the favorite: Salt Beef and Oyster. The beef is salt cured for 10 days, then braised with thyme and paired with lightly poached oysters, mustard vinaigrette, and white kimchee. It’s only available this month and definitely an upgrade on green eggs and ham for the holiday.
